So the semi-bolognese I mentioned in my previous post (where I just dumped extra lean ground beef in the crock without browning it first) came out well, but probably needed more seasoning in general. So Easter is over, which means we're not singing Regina Caeli but rather Salve Regina as the Marian antiphon. Salve Regina's more than twice as long as Regina Caeli, and it doesn't have a repetitive "alleluia", nor are any of the signs (with the possible exception of VALLEY) as inherently fun to produce as ALLELUIA is. I made a whole chicken in the crockpot with baby potatoes and carrots. I put it together during naptime and set it to high, and we ate about four hours later. I'm really glad I did because by the time actual dinner-making time rolled around I was depressed again and glad I didn't have to cook. I hate being so keyed-up.
